He's 8 weeks old, purebred, chocolate lab!!!
One of my friend's was selling him and I knew he would be perfect for my father!

He is so adorable! He is soft and playful! But he LOVES to sleep!
Sleepy little man!

Taco Poppers

Hey guys! How have you been?
My life has been going crazy lately! (hence the lack of recent posts...sorry!)
Kris and I have been going through job changes and wedding planning and a lot of other non interesting things. LOL! So I haven't really had a chance to cook, bake, or anything.

But, today I ran over this yummy recipe for dinner, after making it I feel like it would work better as an appetizer, snack, party food, etc. It was very cheap and very simple, I had most of the ingredients at home already.
So here it is!!

Taco Poppers:

Prep time: 15 mins
Cook time: 15 mins

Ingredients you will need:

Tortilla Shells
1 lb Ground Beef
Salsa of choice ( I used 1 can of Rotel)
Corn (optional, Kris said he would have preferred it without)
Dry Taco Seasoning
1 can refried Beans
Shredded Cheese

Optional: Toppings: Shredded lettuce, diced tomatoes, sour cream, hot sauce, black olives

Also you will need:

2: 12 cup muffin pans
Drinking glass or round cookie cutter
Pan release spray

Directions:

Preheat oven to 425

Start by laying tortilla shells out spaced apart, and use glass or cookie cutter to cut 3-4 medium circles out of each wrap.
I didn't have normal sized tortilla shells so I used the small ones I had, which gave me two circles. Also, my drinking glass didn't seem to work and I did not have a cookie cutter.. so I used a medium round tupperware container lid.

Next spray the muffin tins with pan release spray.
Now you press each wrap circle into muffin tin using your fingers. (Note: it doesn’t have to cover the entire side of the tin)
After that cook the ground beef on a medium heat until browned.

Add some taco seasoning.

Next mix refried beans, corn, taco seasoning, salsa, and drained ground beef together.

Now you use a spoon to fill shells with taco mixture,

Once filled with mixture, top with shredded cheese.

Place tins in oven and cook for 15 minutes.

Once poppers have cooled pop them out of muffin tins and enjoy!!!

These were definetely a hit at my house!!! Everyone loved them, Kris even ate 9 of them!!!Yikes!

Hope you and your loved ones give this recipe a try, and enjoy them as much as we did!!!

Until next time

My Boys:)

Hey guys! How was everybody's weekend? Sorry I haven't posted the past couple days, I have been so busy with wedding stuff and work that I haven't had a chance. I haven't been feeling well the past couple days either :/

I went to our wedding venue, Plantation Bay the other day with my bridesmaid Veronica and my mom, and squared away some details with the linens and catering. We also went to a Bridal Show! It was my first show, and it was lots of fun! They had tons of different booths with all kinds of helpful information!

But anyways!!

Kristopher and I have two a dogs Burrito and Beau! They are both chihuahuas, one apple head and one dear head. We absolutely love them!!!

Burrito is the brown one and Beau is the black one.
They are sooo sweet!

I got Burrito a year ago when he was 4. I was in Salt Lake City, Utah and was at a humane society. I was looking for a Siberian husky, when I saw Burrito. The lady at the pound said that a family moved away leaving him all alone in their backyard, although she had no idea why because he was the most behaved dog they had. I took him out and started to play with him, when I read his report that said he had been there the limit of time allowed and if he was not adopted within two days they would put him to sleep :(
So of course... I had to save him and take him home!
He flew from Utah back to Florida with me the next day and I am so happy that I got him!!
The day I got him in Utah.
Burrito now :)
He is loved by my entire family and is the best dog I have ever had!!

I got Beau one day as my mom and I was driving down the road. A man was holding him with his arm all the way stretched out, holding him over passing traffic. We pulled over and asked him if everything was okay, and he told us if someone didn't take the dog he was going to shoot it. I automatically grabbed the dog out of his hands and said I will take him!!
You could tell the man (who had his young daughter with him) didn't have much, and he told us he needed money for gas and his daughter's field trip (who knows if that was true or not), so I looked in my wallet and gave him the $40 cash I had.
Beau the day I rescued him! SO CUTE!
Beau now :)
He is so loving and playful! I am so happy that I got him that day!

When Kris and I first started talking, he met the boys and fell in love with them! He has loved them and taken care of them since he first met them! We joke around calling them "our sons" and my parents refer to them as their "grand-dogs"!
So with the two of them, and Kris and I we have a little family, and we couldn't be happier!

Until next time!

Buffalo Chicken Wraps and The Bachelor

Hey guys! Tonight I went over to my brother Mitch and my sister in law Sarah's house to watch the season premiere of The Bachelor ( I know it aired Monday but they recorded it to wait until today), hang out with some friends, and have dinner!
Alyssa, Sarah, Rachel, Becca, Rachel
The Bachelor season 17 with Sean Lowe!!!!

The Buffalo Chicken Wraps were very tasty and easy to make! My sister in law Sarah is the one who shared the recipe with me, and they turned out really yummy! After seeing the pictures of them Kris already wants me to cook them for him!

Buffalo Chicken Wraps:

Prep time: 15 minutes
Cook time: 20 minutes

Ingredients you will  need:

2 Bonless Chicken Breasts
Egg Roll Wraps
Butter
Red Hot Wings Buffalo Sauce (or your personal favorite buffalo sauce)
Bleu Cheese Crumbs (optional)
Ranch Dressing (optional)

Directions:

First preheat oven to 375

Take 2 defrosted chicken breasts and put them in a medium sized pan, place the temperature in between medium and high.
Add two tbs of butter and a small amount of buffalo sauce. (Start with a little buffalo sauce at first, you will be adding more)
Using two forks pull chicken apart as it begins to simmer in pan.

After both breasts are shredded and apart,
Add desired amount of buffalo sauce.
Let chicken cook and stir frequently.

Lay out egg roll wraps

Place desired amount of buffalo chicken on egg roll wrap diagonally. (make sure not to make the wraps too thick with chicken because it makes folding difficult)
Add bleu cheese crumbs.
I personally do not like bleu cheese, so I didn't add any to my wraps.

Next you begin to fold your buffalo chicken wraps shut.
Here are the steps on folding them:

Fold one corner over chicken to the middle of wrap.
Bring in both sides making an envelope shape with egg roll wrap.
Take the last pointed corner and fold down over wrap. Dip finger in water and wipe corner to kind of "clue" or "seal" the entire wrap.

Using a napkin, wipe entire egg roll wrap with butter.  (It doesn't need to be a thick layer)
Place buffalo chicken wraps in oven, cook for 20 minutes or until golden brown.

Serve with side of choice and dipping sauce. I dipped mine into to ranch and it was very tasty and our side was seasoned french fries! YUM! You could also use buffalo sauce or bleu cheese dressing to as dipping sauces!

Now it's time to EAT!!!

These were very yummy! I will definetly be making these simple wraps again!
Hope you try it out for yourself and enjoy!

Until next time!
